Spicy Pork and Noodle Bowls
December 16, 2021This is a quick meal that is packed with delicious flavors. Gochujang is a Korean red chili paste that is a mix of sweet, savory and spicy. If you can’t find it in your market, you could try sriracha or sambas oeleck instead!
You will need:
- 1-3 T Gochujang (start with less and test for desired spiciness)
- 5 T hoisin sauce
- 3 T low sodium soy sauce
- 3 T lime juice
- 2 T rice wine vinegar
- 2 t brown sugar
- 2 cloves garlic, minced
- 1/4 c scallions, chopped
- 2 t sesame oil
- 2 T olive oil
- 1 lb ground pork
- 1 medium onion, chopped
- 10 Oz shredded carrot
- 14 Oz udon noodles (prepared according to package)
Then you will…
- In a small bowl, combine the gochujang with the hoisin, soy sauce, lime juice, rice wine vinegar, brown sugar, garlic, scallions, and sesame oil. Set aside.
- In a large nonstick skillet, heat the olive oil over medium heat.
- Add the ground pork and onion to the skillet.
- Cook until turning golden and no longer pink, breaking the pork up into smaller pieces with a spatula — about 6-8 minutes.
- Add the carrots and sauté for 3 minutes.
- Add the noodles and the sauce mixture, stirring to mix everything together.
- Allow to cook for another 2-3 minutes and then serve!
