Spicy Pork and Noodle Bowls

This is a quick meal that is packed with delicious flavors. Gochujang is a Korean red chili paste that is a mix of sweet, savory and spicy. If you can’t find it in your market, you could try sriracha or sambas oeleck instead!

You will need:

  • 1-3 T Gochujang (start with less and test for desired spiciness)
  • 5 T hoisin sauce
  • 3 T low sodium soy sauce
  • 3 T lime juice
  • 2 T rice wine vinegar
  • 2 t brown sugar
  • 2 cloves garlic, minced
  • 1/4 c scallions, chopped
  • 2 t sesame oil
  • 2 T olive oil
  • 1 lb ground pork
  • 1 medium onion, chopped
  • 10 Oz shredded carrot
  • 14 Oz udon noodles (prepared according to package)

Then you will…

  1. In a small bowl, combine the gochujang with the hoisin, soy sauce, lime juice, rice wine vinegar, brown sugar, garlic, scallions, and sesame oil. Set aside.
  2. In a large nonstick skillet, heat the olive oil over medium heat.
  3. Add the ground pork and onion to the skillet.
  4. Cook until turning golden and no longer pink, breaking the pork up into smaller pieces with a spatula — about 6-8 minutes.
  5. Add the carrots and sauté for 3 minutes.
  6. Add the noodles and the sauce mixture, stirring to mix everything together.
  7. Allow to cook for another 2-3 minutes and then serve!
