Sweet Corn and Pea Pancakes

These are a fun side dish or vegetarian meal option. They are easy enough to mix that you can have small kids help out, yet they are full of deliciousness from the corn and peas and cheese.

You will need:

  • 2 c corn kernels
  • 1 c sweet peas
  • 1 1/4 c flour
  • 1 t baking powder
  • 1 t onion powder
  • 1 t garlic powder
  • 1/2 t paprika
  • 1/2 t salt
  • 1/4 t pepper
  • 3/4 c milk
  • 2 eggs, lightly beaten
  • 1/3 c grated Parmesan
  • Enough olive oil to thinly coat your skillet
  • Optional: sour cream for serving

Then you will…

  1. In a medium mixing bowl, combine everything but the sour cream.
  2. Heat a large nonstick skillet (coated with a thin layer of olive oil) over medium heat.
  3. Drop batter by the 1/4 cup into the hot skillet, 2 minutes on each side until golden brown and cooked through.
  4. Serve hot with sour cream on top.

Blackberry Mint Limeade

Summer sun goes perfectly with chilly, tart citrus drinks like lemonade and limeade. Adding blackberries here gives it some extra sweetness, while the mint makes the drink even more refreshing.

You will need:

  • 3 pints fresh blackberries
  • 6 c water, divided
  • 4 oz (~1/2 c) fresh mint, roughly chopped
  • 1 c sugar
  • 1 1/2 c fresh lime juice (from about 8-10 limes)

Then you will…

  1. In a blender, puree the blackberries with one cup of the water.
  2. Strain the blackberries through a fine sieve into a large pitcher or bowl.
  3. In a small saucepan, combine the mint and sugar with one cup of water. Bring to a simmer, stirring occasionally, until the sugar is dissolved. Remove from heat.
  4. Strain the syrup to remove the mint leaves.
  5. Pour the mint syrup into the blackberry mixture.
  6. Add the lime juice and remaining 4 cups of water.
  7. Stir and serve over ice!

Pomegranate Moscow Mule

Prep the mix for this drink before your next winter party, and you’ll make your guests very happy: quick prep and a lovely cocktail as the result!

You will need:

  • 6 c pomegranate juice
  • 2 c lime juice
  • 1/2 c honey
  • A few sprigs of fresh rosemary
  • Ice
  • Vodka
  • Ginger beer

Then you will…

  1. Stir together the pomegranate juice, lime juice, and honey in a large bowl.
  2. Transfer to a serving pitcher or other beverage container.
  3. Drop the rosemary sprigs into the mix.
  4. Chill in the fridge for at least 1 hour.
  5. When ready to serve, add ice to your glass and fill about 1/3 of the way with mixer.
  6. Add 2-3 oz vodka and top off with ginger beer.
  7. Give your drink a swirl and enjoy!

Elderflower Gin and Tonic Punch

This was the third punch bowls we served at our “welcome to summer” party. It is a light and fun twist on a traditional gin and tonic. The elderflower liqueur makes it taste just like the summer sun.

You will need:

  • 2 1/2 c gin
  • 1 bottle (750 mL) St. Germain Elderflower Liqueuer
  • 2 L tonic

Then you will…

  1. In a large punch bowl or pitcher, mix together the gin and St. Germain.
  2. Add the tonic.
  3. Serve over ice.

Pimm’s Cup

This is the second of three punch bowls we served at our “welcome to summer” party. It would also be a fun drink to mix up around Kentucky Derby time.

You will need:

  • 1 bottle (750 mL) Pimm’s No. 1 Cup Liqueur
  • 1/2 cucumber, sliced into thin rounds
  • A handful of frozen strawberries
  • 1 orange, sliced thin
  • 1 lemon, sliced thin with seeds removed
  • 1 green apple, sliced thin
  • 1 c fresh mint leaves
  • 2 L sprite

Then you will…

  1. Pour the Pimm’s into a punch bowl or pitcher.
  2. Add the fruit.
  3. Lightly crush the mint by rubbing it between your palms. Add to the punch.
  4. Mix in the sprite.
  5. Serve over ice.

Bourbon Tea Punch

Another great idea for a summer party are boozy punch recipes. This way you can prep the drinks in advance, and then allow guests to self-serve. This is one of three punch bowls we served at our “welcome to summer” party.

You will need:

  • 4 c boiling water
  • 8 Earl Grey teabags
  • 1 1/3 c bourbon
  • 2 L lemonade

Then you will…

  1. In a large mixing bowl, pour the water over the tea bags. Allow to steep for 10 minutes.
  2. Refrigerate the tea until cold.
  3. In a punch bowl or pitcher, combine the tea with the bourbon and lemonade.
  4. Serve over ice.

Campari-Grapefruit Popsicles

Did you like the other popsicles? Here is the second summer treat we made for the party. It also makes about 6 popsicles.

You will need:

  • 1 c sugar
  • 1 c water
  • 3 c grapefruit juice
  • 1/2 c Campari

Then you will…

  1. In a small sauce pot, combine the sugar and water.
  2. Over medium-low heat, stir until dissolved and bring to a boil.
  3. Allow the syrup to boil for 5 minutes.
  4. Remove from the heat and allow to cool.
  5. In a medium mixing bowl, combine one cup of the syrup with the grapefruit juice and Campari.
  6. Pour into popsicle molds and allow to freeze overnight.
  7. Find some friends on a warm summer night and enjoy together!
