Fresh Spinach Pasta

I love when you are talking to friends and decide it is a lovely day for a spontaneous dinner party. We decided to contribute some fresh spinach pasta to go with a friend’s amazing alfredo sauce.

You will need:

  • 1 t olive oil
  • 12 oz fresh baby spinach
  • 1/2 t garlic powder
  • 3 eggs (whites and yolks)
  • 2 egg whites
  • 1 t salt
  • 1 t dried basil
  • 1 t dried oregano
  • 5 c flour
  • 4-7 T ice water

Then you will…

  1. Heat the olive oil in a nonstick skillet.
  2. Cook the spinach with the garlic power just until wilted.
  3. Remove and press between paper towels until the spinach is as dry as you can make it.
  4. Put the spinach in a blender and puree till smooth.
  5. Add the egg yolks and whites plus the salt, basil and oregano. Pulse until mixed well.
  6. Create a mound of flour on the counter with a well in the middle.
  7. Pour the spinach mixture into that well.
  8. Incorporate with your hands.
  9. Add a tablespoon of the ice water and then knead until smooth and elastic, about 8-10 minutes. (Add water as needed until dough comes together).
  10. Cover with plastic wrap and let rest for 20 minutes.
  11. Divide into portions and either use a pasta machine of your choice or roll it out and shape however you want.
  12. Gently toss the fresh pasta with cornmeal to keep it from sticking.
  13. Allow it to dry for at least an hour before cooking. (If you want to freeze some, form it into small heaps/nests. Place those on a parchment-lined baking sheet and cover with plastic wrap. Place in freezer until hard. Transfer from sheet into freezer ziplock bags and then cook from frozen as desired).
  14. Then add to a pot of boiling salted water and cook for 2-4 minutes, or until al dente.
  15. Toss with your favorite sauce!

Puff Pastry Quiche with Spinach and Cheese

There are many great things about this recipe. First, you get to use puff pastry, which is flaky and buttery. Then you get to make quiche that is portable and easily customized, which makes this perfect for brunch or households where tastes vary. You can always mix up the egg base and set out a “filling bar” so hungry diners can choose-their-own meal adventure.

This recipe will give you a dozen muffin-sized quiches and a dozen mini quiches. You will likely have some extra filling mixture at the end too, which is perfect for making a quick egg scramble!

You will need:

  • 6 eggs
  • 2 c fat-free half and half
  • 2 t garlic powder
  • 1 t pepper
  • 1/2 t paprika
  • 1/2 t salt
  • 1/4 t crushed red pepper flakes (optional)
  • 2 c frozen chopped spinach, thawed with the extra water squeezed out
  • 1/2 small onion, minced
  • 2 c shredded cheese (I used a cheddar-jack blend)
  • 2 sheets of puff pastry, thawed according to the directions

Then you will…

  1. Preheat your oven to 400 degrees. Set a regular and a mini-sized muffin tin on the counter to the side. Lightly grease the tins.
  2. In a medium mixing bowl, whisk the eggs together with the half and half, garlic powder, pepper, paprika, salt, and red pepper flakes until light and airy.
  3. Stir in the spinach, onion and cheese (or whatever fillings you want…be creative!).
  4. Set aside.
  5. Unfold one sheet of puff pastry and cut into 9 pieces (3×3). Gently stretch each piece slightly and press each piece into a regular sized muffin tin well.
  6. Unfold the second piece of puff pastry. Cut one-third of it into 3 pieces; these should be roughly equal in size to what you just cut. Gently stretch each piece slightly and press each piece into a regular muffin tin well.
  7. At this point you should have a dozen regular-sized muffin tin wells lined with puff pastry. The next step will line a dozen mini-sized muffin tin wells.
  8. Cut the remaining puff pastry into 12 pieces (3×4). Gently stretch each piece slightly and press into the mini muffin tin wells.
  9. Pour a little water into any unused mini muffin tin wells to protect them while baking.
  10. Gently spoon the egg mixture into each lined muffin tin well. The egg will rise a little, so you do not need to fill it to the top of the well. I recommend filling to about 2/3 full.
  11. Bake until the egg center is not wet/jiggly in the middle and the puff pastry is golden. It will take about 12-17 minutes for the mini quiches and another 5 or so for the regular muffin-sized ones. Check frequently near the end.
  12. Remove from the oven and allow to cool in the pan for at least 5 minutes before removing. Finish cooling on a wire rack until they are cool enough to eat.

Spinach Tortellini Tomato Soup

This soup is a quick on to put together. For an easy dinner, add a side salad and some crusty bread!

You will need:

  • 2 T olive oil
  • 1 lb sweet Italian sausage, removed from casings (optional if you want a vegetarian soup)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, peeled
  • 2 cans (14.5 oz each) diced tomato with their juices
  • 32 oz low sodium broth
  • 1 t oregano
  • 1 t dried basil
  • 1/2 t crushed red pepper flakes
  • Salt and pepper, to taste
  • 12 oz refrigerated spinach tortellini
  • 9 oz fresh baby spinach

Then you will…

  1. In a large stock/soup pot, heat the olive oil over medium heat.
  2. If using, add the sausage. Cook stirring frequently until crumbled and starting to brown.
  3. Add the onion and cook another 5 minutes, or until the onions are starting to soften and brown.
  4. Meanwhile, blend together the garlic cloves and one can of the diced tomatoes with their juices until finely pureed.
  5. Add the garlic-tomato mixture to the pot with the sausage and onions. Stir together.
  6. Add the other can of tomatoes to the pot along with the broth, oregano, basil and red pepper flakes.
  7. Season with salt and pepper to taste.
  8. Stir in the tortellini and allow to cook for time on the package.
  9. With about one minute left, stir in the fresh spinach to wilt it.
  10. Serve hot!

Florentine Cauliflower Steaks

This is a yummy dish that can either serve as a vegetarian main course or a robust side dish. It is full of spinach and cheese, and the roasted cauliflower has a nutty flavor that is extra delicious.

You will need:

  • 1 large head of cauliflower
  • 2 T olive oil
  • 1/4 t salt
  • 1/4 t pepper
  • 2 T butter
  • 2 T flour
  • 1 c milk
  • 2 cloves garlic, peeled and minced
  • 1/2 c shredded Parmesan cheese
  • 5 oz fresh baby spinach, finely chopped
  • 1/4 c panko breadcrumbs

Then you will…

  1. Preheat your oven to 475 degrees. Lightly grease a baking sheet with sides.
  2. Cut the cauliflower in half (top to bottom of stem). Remove extra leave but leave the core and top part of the stem.
  3. Cut the cauliflower into 2-inch thick slices.
  4. Place the cauliflower on baking sheet. Drizzle with the olive oil and season with the salt and pepper.
  5. Roast the cauliflower for 15 minutes. Remove from the oven and flip the cauliflower over.
  6. Meanwhile, melt the butter in a medium saucepan on medium-low heat.
  7. Whisk in the flour and cook for 2 minutes.
  8. Slowly whisk in the milk until it is smoothly incorporated into the butter-flour mixture (roux).
  9. Whisk in the garlic.
  10. Allow the mixture to thicken, whisking regularly.
  11. Whisk in the Parmesan until melted and smooth.
  12. Remove from heat and stir in the spinach.
  13. Roast the cauliflower for another 10 minutes. It should be tender enough to pierce with a fork and a golden brown along the edges.
  14. Top the cauliflower with the cheese sauce.
  15. Sprinkle with the panko breadcrumbs.
  16. Return the cauliflower to the oven and bake until the crumbs are golden, about another 5 minutes.

Paprika Spinach Chicken

This is a fragrant, juicy chicken dish perfect for an upcoming date night or night in with friends. It is made from a few simple ingredients that turn magical in the pan.

You will need:

  • 1 lb chicken breasts
  • 1 t paprika
  • 1/4 t salt
  • 1/2 t pepper, divided
  • 3 T olive oil, divided
  • 2 T unsalted butter
  • 1/4 fresh sage, washed and dried and finely chopped
  • 3 cloves garlic, minced
  • 1 c dry white wine
  • 4 oz fresh baby spinach

Then you will…

  1. Season the chicken with the paprika, salt and 1/4 teaspoon of the pepper, spreading it out on all sides.
  2. Heat 2 tablespoons of the olive oil in a large nonstick skillet over medium heat.
  3. Add the chicken and cook 3-5 minutes until the first side is golden.
  4. Flip the chicken over and cook another 3-5 minutes until the second side is golden.
  5. Add the remaining olive oil, the butter, sage, and garlic to the pan.
  6. Sauté for 2-3 minutes or until the butter is melted and the seasoning fragrant.
  7. Stir in the wine and bring to a simmer. Allow to simmer for 20 minutes, partially covered.
  8. Stir in the spinach and allow to just wilt. Remove from heat.
  9. Season with salt and pepper, to taste.

Creamy Onion, Mushroom and Spinach Pasta Sauce

This is a very hearty sauce that D and I made one night recently. It includes lots of our favorite things: caramelized onions, mushrooms, and fresh spinach. We ate it with some homemade ravioli, but I think it would be even better with a longer noodle like fettuccine. That type of pasta would stand up to the meatiness of the sauce. It is also a little richer than most of the sauces we make, so it is definitely something to serve as a treat.

You will need:

  • 3 T unsalted butter, divided
  • 1 large sweet onion, cut into thin slices
  • 3 cloves garlic, minced
  • 8 oz baby Bella mushrooms, sliced
  • 8 oz Shiitake mushrooms, stems removed and the tops sliced
  • 1/4 c sherry (or Marsala or other preferred wine) – optional
  • 14.5 oz (1 can) diced fire-roasted tomatoes
  • 5 oz fresh baby spinach
  • 1 c light cream
  • 3/4 c grated hard Italian cheeses (I used a three cheese blend of Asiago, Romano and Parmesan)
  • Salt and pepper, to taste

Then you will…

  1. In a large nonstick skillet, melt half of the butter over medium-low heat.
  2. Add the onion slices and stir to coat with the melted butter.
  3. Pile the onions together in the middle and allow to caramelize slowly, stirring infrequently, about 15-20 minutes.
  4. Stir in the garlic and allow to cook until fragrant.
  5. Remove from the pan and reserve in a bowl on the side.
  6. Melt the remaining butter over medium heat in the same pan.
  7. Add the mushrooms and stir to coat.
  8. Allow to cook through until the liquid is mostly evaporated.
  9. Mix in the sherry to the mushrooms and allow to cook off.
  10. Add the onion-garlic mixture back into the pan.
  11. Stir in the can of diced tomatoes with their juices.
  12. Simmer over medium heat, allow to cook until the tomatoes are heated through and able to be slightly broken down with a spoon.
  13. Mix in the cream and the grated cheese. Stir gently until the cheese is melted and well integrated in the sauce.
  14. Season generously with freshly ground pepper (and salt to taste).
