Baked Honey Mustard Chicken Tenders

Yumm. These tenders have all sorts of things that I love: honey, mustard, chicken. They are full of flavor from the marinade and can be prepped in advance. That makes them great for a weeknight.

You will need:

  • 1/3 c whole grain Dijon mustard
  • 1/3 c honey
  • 2 T brown sugar
  • 1/2 t paprika
  • 1/4 t garlic powder
  • 1/4 t onion powder
  • 1 1/4 – 1 1/2 lb chicken tenders
  • 2 c panko bread crumbs
  • 1/4 t pepper
  • 1/4 t salt

Then you will…

  1. In a medium bowl, whisk together the mustard, honey, brown sugar, paprika, garlic powder, and onion powder.
  2. In a large ziploc bag, combine the chicken tenders with the honey-mustard marinade. Ensure the chicken is coated, remove the excess air from the bag, and allow to marinate in the fridge for at least a half hour.
  3. Preheat your oven to 350 degrees.
  4. Line a rimmed baking sheet with foil, then place an ovenproof wire rack on top of it. Lightly grease the rack with nonstick cooking spray.
  5. On a plate, mix together the panko with the salt and pepper.
  6. Dredge the chicken in the panko and place on the rack on the baking sheet.
  7. Bake for 15-20 minutes, until the chicken is cooked through.

Bacon, Egg and Cheese Muffin Bites

These mini egg muffins are packed with bacon, cheese and potatoes. They are delicious for breakfast or as part of lunch or dinner, and they are wonderfully portable. This will make 2 dozen mini muffins…although you probably won’t have any leftovers!

You will need:

  • 1/2 lb red-skinned potatoes, small diced
  • 2 T olive oil
  • 1/2 yellow onion, minced
  • 1 t onion powder
  • 1/2 t garlic powder
  • 1/2 t pepper
  • 1/4 t salt
  • 4 eggs, beaten
  • 2 T milk
  • 1 t dried chives (or 1 T fresh)
  • 1/3 c shredded sharp cheddar cheese
  • 1/4 lb bacon, crisped and crumbled

Then you will…

  1. Preheat your oven to 350 degrees. Lightly grease a 24 count mini muffin pan with nonstick cooking spray.
  2. Put the potatoes in a large pot of lightly salted water.
  3. Bring to a boil and allow to cook until the potatoes are just fork tender, about 5-8 minutes.
  4. Drain the potatoes.
  5. In a large nonstick skillet, heat the olive oil over medium heat.
  6. Add the potatoes and onion to the hot skillet and saute for 3-5 minutes, until the onion is starting to soften.
  7. Mix in the onion powder, garlic powder, pepper and salt and allow to cook another minute.
  8. Remove from heat and allow to cool at least 5 minutes.
  9. In a large mixing bowl, whisk together the eggs and milk and chives.
  10. Stir in the potato-onion mixture, cheese and bacon.
  11. Spoon the mixture into the prepared mini muffin cups.
  12. Bake 15-20 minutes. The edges should be turning golden and starting to pull away from the side, and the center should be set.
  13. Allow to cool at least 5 minutes before removing from the pan with a spoon.

Sundried Tomato Clover Rolls

These rolls come together very quickly and are full of delicious sun-dried tomatoes and cheese (what a classic combination!). Clover rolls are named after the clover plant, because they have three pieces. Being able to pull the rolls apart was a terrific fun factor for our toddler!

You will need:

  • 2 1/4 t (1 packet) yeast
  • 1/2 c milk, lukewarm
  • 1/3 c water, lukewarm
  • 10 oz sun-dried tomatoes packed in oil, drained with 3 T of the oil reserved
  • 1 t salt
  • 1 egg, beaten
  • 1 T onion powder
  • 3 1/4 c flour
  • 1 c shredded sharp cheddar cheese

Then you will…

  1. In a large mixing bowl or the bowl of a stand mixer, combine the yeast with the milk and water. Allow to rest and bloom for 5 minutes.
  2. Chop the sun-dried tomatoes.
  3. Mix in the tomatoes, tomato oil, salt, egg, onion powder, flour and cheese.
  4. Knead until smooth and soft, 7-8 minutes.
  5. Lightly grease a large bowl and put the dough in, coating it on all sides. Cover with a damp towel and allow to double in size, roughly one hour.
  6. Lightly grease a 12 muffin tin with nonstick cooking spray.
  7. Roll the dough into 36 small balls and put three in each muffin cup.
  8. Allow to rise another 30 minutes.
  9. Preheat your oven to 350 degrees.
  10. Bake for 15-20 minutes, until the rolls are lightly golden on the edges and gently spring back under your finger.
  11. Allow to cool for 5 minutes before removing from the tin. Finish cooling on a wire rack.

One Pot Mac n Cheese

Easy, cheesy and perfectly comforting. This simple mac n cheese comes together in one pot on your stovetop. If you want a cheesier taste, you could omit the pureed veg.

You will need:

  • 1 lb elbow or pipette noodles
  • 5 c milk
  • 2 t garlic powder
  • 1 t onion powder
  • 1/2 t paprika
  • 1/4 t salt
  • 1/4 t pepper
  • 2 T unsalted butter
  • 8 oz pureed carrot baby food
  • 4 oz pureed pumpkin baby food
  • 1 T Dijon mustard
  • 4 c freshly shredded cheddar
  • Optional: crispy fried onions, roughly chopped (like you put on a green bean casserole)

Then you will…

  1. In a large saucepan, combine pasta with the milk, garlic powder, onion powder, paprika, salt and pepper.
  2. Bring to a light boil over medium heat, stirring frequently.
  3. Allow to cook until the pasta is just tender, another 5-6 minutes.
  4. Stir in the butter, carrot and pumpkin purees, mustard and cheddar until everything is mixed well and the cheese is melted.
  5. Serve hot with crispy fried onions sprinkled on top!

Sweet Corn and Pea Pancakes

These are a fun side dish or vegetarian meal option. They are easy enough to mix that you can have small kids help out, yet they are full of deliciousness from the corn and peas and cheese.

You will need:

  • 2 c corn kernels
  • 1 c sweet peas
  • 1 1/4 c flour
  • 1 t baking powder
  • 1 t onion powder
  • 1 t garlic powder
  • 1/2 t paprika
  • 1/2 t salt
  • 1/4 t pepper
  • 3/4 c milk
  • 2 eggs, lightly beaten
  • 1/3 c grated Parmesan
  • Enough olive oil to thinly coat your skillet
  • Optional: sour cream for serving

Then you will…

  1. In a medium mixing bowl, combine everything but the sour cream.
  2. Heat a large nonstick skillet (coated with a thin layer of olive oil) over medium heat.
  3. Drop batter by the 1/4 cup into the hot skillet, 2 minutes on each side until golden brown and cooked through.
  4. Serve hot with sour cream on top.

Faux Lasagna Noodle Casserole

We love lasagna but sometimes it feels like a lot of effort to make right. This noodle casserole has all the yummy parts of lasagna (pasta, cheese, sauce) while being a little simpler to put together.

You will need:

  • 12 oz short shaped noodles (works best with farfalle, gemelli, or egg noodles)
  • 1 medium yellow onion, chopped
  • 1.5 lb ground beef
  • 14 oz crushed tomatoes
  • 2 T garlic powder
  • 2 T onion powder
  • 1 T dried minced onion
  • 1 T oregano
  • Salt and pepper, to taste
  • 1 c sour cream
  • 16 oz cottage cheese
  • 1 c grated Parmesan
  • 1 small bunch scallions, chopped
  • 3 c shredded cheese (suggest an Italian blend)

Then you will…

  1. Preheat your oven to 350 degrees. Light grease a 9×9 baking dish with nonstick cooking spray.
  2. In a large pot of salted water, cook your noodles to al dente according to packaging. Drain and set aside.
  3. Meanwhile, cook the onion and beef in a large nonstick skillet over medium heat until the beef is crumbled and browned (about 7-10 minutes). Drain off any excess fat from the skillet.
  4. Stir the crushed tomatoes into the beef-onion mixture along with 1 tablespoon of the garlic powder, 1 tablespoon of the onion powder, and 1 tablespoon of the oregano. Season with salt and pepper to taste and allow to simmer 5-10 minutes.
  5. In a large mixing bowl, stir together the sour cream with the cottage cheese, Parmesan, 1 tablespoon of the garlic powder, 1 tablespoon of the onion powder, and scallions. Season with pepper to taste.
  6. Mix the noodles into the sour cream mixture.
  7. Spread half of the noodles in the prepared pan.
  8. Spread half of the beef on top of the noodles.
  9. Spread half of the shredded cheese on top of the noodles.
  10. Repeat with another layer of noodles then beef and finally cheese.
  11. Cover with foil and bake for 45 minutes.
  12. Remove the foil and bake for another 10-15 minutes or until the cheese on top is melted and slightly golden.
  13. Allow to cool five minutes before serving.

Crispy Parmesan Baked Potatoes

This is another very simply recipe that requires little prep work. The Parmesan makes a crispy crust on the potatoes, which is so delicious. We should have had leftovers, but we kept grabbing extras as we were cleaning up from dinner!

You will need:

  • 1/2 c finely grated Parmesan cheese
  • 1/2 t garlic powder
  • 1/2 t onion powder
  • 1/2 t paprika
  • 1/2 t dried oregano
  • 1/2 t pepper
  • 1 1/2 lb baby red-skinned potatoes
  • Olive oil

Then you will…

  1. Preheat your oven to 400 degrees. Pour just enough olive oil in a 9×13 baking dish to coat the bottom.
  2. In a small bowl, combine the cheese with the garlic powder, onion powder, paprika, oregano and pepper.
  3. Sprinkle the cheese mixture along the bottom of the prepared baking dish until evenly coated.
  4. Cut the potatoes in half lengthwise.
  5. Place the potatoes, cut side down, on top of the cheese mixture.
  6. Bake for 30-40 minutes, or until the potatoes are tender.
  7. Remove from oven and use a knife to gently cut through the cheese and separate the potatoes.
  8. Allow to cool at least 5 minutes before serving.
