Hot and Cheesy Corn Dip

This is a fun twist on gooey, cheesy dips that reminds me of summer with all the sweet corn inside. It goes wonderfully with crispy tortilla chips (we had a mix of blue corn and sweet potato chips on hand). If you have fresh summer corn at home, feel free to cut the kernels off a cob or two and mix it in before baking for extra crunch and the deliciousness of long sunny days.

You will need:

 

  • 16 oz (2 sticks) low fat cream cheese, softened
  • 1/2 c sour cream
  • 3 cloves garlic, minced
  • 3 T hot sauce
  • 2 limes, zested and juices
  • 2 1/2 c shredded cheddar cheese, divided
  • ~30 oz canned corn, drained and rinsed
  • 4 oz feta cheese, crumbled
  • 4.5 oz chopped green chiles (mild to spicy, depending on your taste)
  • 1 bunch scallions, trimmed and chopped
  • 3 T red onion, chopped
  • 1/3 c fresh cilantro, chopped

 

Then you will…

  1. Preheat your oven to 350 degrees. Lightly spray a pie plate with nonstick cooking spray.
  2. Use a food processor to mix together the cream cheese, sour cream, garlic, hot sauce, lime juice, and 1 cup of the shredded cheddar.
  3. In a large mixing bowl, combine the cream cheese mixture with 1 cup of the cheddar, lime zest, corn, feta, green chiles with their liquid, red onion, scallion and cilantro.
  4. Pour mixture into a prepared pie plate.
  5. Sprinkle with the remaining cheddar.
  6. Bake for 20 minutes or until bubbly and delicious.

Parmesan Chicken Tenders

I LOVE CHICKEN TENDERS. I admit it. They are one of my favorite meals and can always turn my day around for the better. These are quick to put together and then are baked. The end result is a crispy meal that will make you smile.

You will need:

  • 2 c buttermilk
  • 1/4 c hot sauce
  • 1 lb chicken tenders
  • 1 c flour
  • 1/2 t paprika
  • 1/2 t garlic powder
  • 3/4 t pepper, divided
  • 3 eggs
  • 1 1/2 c Panko bread crumbs
  • 1/4 t salt
  • 3/4 c shredded Parmesan

Then you will…

  1. In a large ziplock bag, combine the buttermilk with the hot sauce.
  2. Add the chicken into the marinade.
  3. Allow to marinate for at least an hour.
  4. On a large plate, combine the flour with the paprika, garlic powder, and 1/4 teaspoon of the pepper.
  5. On a large plate, beat the eggs until the whites and yolks are combined.
  6. On a third plate, combine the bread crumbs with the remaining 1/2 teaspoon of pepper, the salt and the Parmesan.
  7. Preheat your oven to 400 degrees. Line a baking sheet with parchment paper.
  8. For each piece of chicken, allow the excess buttermilk to shake off. Then dredge in the flour mixture. Coat with egg and then dredge in the Parmesan mixture.
  9. Place the chicken on the prepared baking sheet.
  10. Bake for 10 minutes.
  11. Flip the chicken over and bake for another 10 minutes, or until cooked through and golden.

Maria’s Hot Clam Dip

This recipe comes from a very dear friend of mine, Maria. It comes together  quickly from a small number of ingredients. It is great served with triscuits or your favorite bread or cracker.

You will need:

  • 1 stick unsalted butter (or olive oil)
  • 1/c c onion, chopped
  • 1/2 c green pepper, chopped
  • 1 clove garlic, minced
  • 1/2 t pepper
  • 2 cans (6.5 oz) chopped clams
  • 1 c bread crumbs
  • Hot sauce, to taste

Then you will…

  1. Preheat oven to 350 degrees.
  2. In a nonstick skillet, melt the butter over medium heat.
  3. Stir in the onion, green pepper, garlic and pepper. Saute until tender, 3-5 minutes.
  4. Add in the clams with juices; simmer 10 minutes.
  5. Remove from heat and mix in the bread crumbs.
  6. Spread the dip in a pie plate and sprinkle, to taste, with the hot sauce.
  7. Bake 25 minutes.
  8. Allow to cool for 5 minutes before serving.
