Instant Pot Sweet and Spicy Chicken Thighs

Check out this Instant Pot recipe for an easy and flavorful entree. If you don’t want any spice, you can omit the sambal oelek…however give it a whirl! Sambal oelek is an Indonesian chile paste made from crushed raw red chiles, vinegar, and salt. Most grocery stores carry it in the international foods section.

You will need:

  • 1/3 c honey
  • 3 cloves garlic, peeled and minced
  • 1/2 c tamari (or can substitute low salt soy sauce)
  • 1/2 c ketchup
  • 2 T Worcestershire sauce
  • 1-3 T sambal oelek (add based on your spice preference)
  • 2 T dried oregano
  • 4 T sesame seeds, divided
  • 1/2 t pepper
  • 1/4 t salt
  • 3 T sesame seed oil
  • 2 lb boneless, skinless chicken thighs
  • 1 bunch scallions, trimmed and chopped

Then you will…

  1. In a medium mixing bowl, combine the honey with the garlic, tamari, ketchup, Worcestershire, sambal oelek, oregano, 2 tablespoons of the sesame seeds, salt and pepper.
  2. Set your Instant Pot to saute and warm the sesame seed oil.
  3. Sear the chicken 3 minutes per side.
  4. Pour the sauce mixture on top of the chicken.
  5. Close your Instant Pot.
  6. Cook on manual (or pressure) for 10 minutes.
  7. Wait for 10 minutes before releasing the pressure.
  8. Shred the chicken and mix back into the sauce.
  9. Serve topped with the remaining sesame seeds and the scallions.

Peanut Butter Oatmeal Granola Bars

While home with our sweet newborn, I’ve learned having snacks I can eat one-handed nearby is a must. I love these bars chilled, so I recommend keeping them in the fridge and grabbing a slice when you need a delicious break from your day.

You will need:

  • 1 c creamy peanut butter
  • 1/4 c honey
  • 1/4 c maple syrup
  • 2 c old-fashioned oats
  • 1 c dried fruit, roughly chopped
  • 1/4 c dark chocolate chips, roughly chopped

Then you will…

  1. Line a 9×9 baking dish with foil and lightly spray with nonstick cooking spray.
  2. In a saucepan, heat the peanut butter together with the honey and maple syrup over medium-low heat until smooth and well combined. Remove from heat.
  3. In a large mixing bowl, mix together the oats and dried fruit.
  4. Stir the peanut butter sauce into the oat mixture.
  5. Stir in the chocolate.
  6. Press the mixture into the prepared dish and refrigerate at least 3 hours or until firm before slicing.

Strawberries n’ Yogurt Popsicles

Our teething toddler recently discovered popsicles and all their cool yumminess. We found a mini popsicle mold online that makes small popsicles that are just the right size for his cute little hands and mouth. He loves strawberries and yogurt, so we let that inspire these popsicles.

You will need:

  • 16 oz fresh strawberries, hulled
  • 1 c vanilla yogurt (I recommend a thicker yogurt like Greek or Icelandic skyr)
  • 4 T honey or maple syrup
  • 1/2 t lime juice
  • 1/2 t vanilla extract

Then you will…

  1. Puree all the ingredients in a blender until smooth.
  2. Pour into popsicle molds.
  3. Freeze overnight.
  4. Enjoy in the sunshine.

Honeyed Pork Schnitzel

I am a sucker for all types of German food, like schnitzel. This one has a fun honey-lemon glaze for a sweet and sour effect.

You will need:

  • 2 T flour
  • 1/2 t salt
  • 1/2 t pepper
  • 4 pork cutlets (~4 oz each)
  • 2 T olive oil
  • 1/4 c lemon juice
  • 1/4 c honey

Then you will…

  1. On a large plate, mix together the flour with the salt and pepper.
  2. Add the pork, one piece at a time. Flip to coat and set aside on a clean plate.
  3. Heat a large nonstick skillet over medium heat with the olive oil.
  4. Cook the pork 3-4 minutes on each side or until juices run clear.
  5. Remove the pork and set aside.
  6. Add the lemon juice and honey to the skillet.
  7. Cook and stir until starting to thicken, about 3 minutes.
  8. Return the pork to the pan and toss to coat. Allow to cook another 2-3 minutes or until heated through.

Sticky Garlic Meatballs

These are very yummy and particularly kid friendly. You can prep the meatballs in advance and then warm them up in a slow cooker or a low heat oven when your family and friends gather.

You will need:

  • 2 lb ground beef or meatloaf mix
  • 1 c old-fashioned oats
  • 2 eggs, lightly beaten
  • 1/2 c milk
  • 1 1/2 t garlic powder
  • 1 t basil
  • 1 t oregano
  • 1/2 t pepper
  • 1/4 t salt
  • 3 cloves garlic, minced
  • 1 c ketchup
  • 2/3 c honey
  • 2 T soy sauce

Then you will…

  1. Preheat your oven to 375 degrees. Line a baking dish with foil and spray lightly with non-stick cooking spray.
  2. In a large bowl, mix together the beef with the oats, egg, milk, garlic powder, basil, oregano, pepper and salt.
  3. Form the mixture into two dozen meatballs and place them on the lined baking sheet.
  4. Bake for 30 minutes or until cooked through and starting to turn golden on the edges.
  5. In a small bowl, combine the minced garlic with the ketchup, honey and soy sauce.
  6. Mix the meatballs with the sauce and heat through. Serve with friends!

Blueberry Vanilla Overnight Oats

Growing up in New England, my family frequently went blueberry picking. Fresh blueberries, hot from the sun, are delicious. This overnight oatmeal recipe is chock full of blueberries for a refreshing breakfast. While the below recipe is dairy-free, you can always substitute regular yogurt and milk if you wanted. This makes roughly 4 generous portions.

You can also test out the banana nut, chocolate coconut, chocolate peanut butter, or tropical summer versions!

You will need:

  • 2 1/2 c old-fashioned oats
  • 10 oz coconut milk yogurt
  • 2 t vanilla extract
  • 2 t ground cinnamon
  • 4 T honey
  • 2 1/2 c soy milk
  • 2 pints fresh blueberries
  • 1 c chopped pecans, toasted

Then you will…

  1. In a large bowl, mix together all the ingredients, except for the nuts.
  2. Refrigerate overnight.
  3. Stir and serve topped with nuts.

Tropical Summer Overnight Oats

I love the summer. All the sun is a perfect match for pineapple, coconut and the beach. This is a no-cook overnight oatmeal that has all the fun flavors of summer. The below recipe is dairy-free. However you could substitute regular yogurt and milk if you wanted. This makes roughly 4 generous portions. Pineapple or coconut not your thing? Check out the banana nut, chocolate coconut, or chocolate peanut butter versions!

You will need:

  • 2 1/2 c old-fashioned oats
  • 4 T honey
  • 1 pineapple, cored and chopped into bite-sized pieces
  • 1 can (14 oz) lite coconut milk
  • 1 c soy milk
  • 1 c sweetened coconut, shredded
  • 1/2 c sliced almonds
  • 1/2 c chopped macadamia nuts

Then you will…

  1. In a large bowl, mix together all the ingredients, except for the nuts.
  2. Refrigerate overnight.
  3. Stir and serve topped with nuts.
