Chicken Bacon Ranch Party Rolls

These are so easy and perfect for a gathering. You can prep everything in advance and then pop these in the oven until they are toasty, while you are having fun with your guests. I challenge you to only eat one.

You will need:

  • 6 oz plain Greek yogurt
  • 1 packet Ranch seasoning powder
  • 1 T milk
  • 1 package 15-oz slider rolls
  • 7-8 oz sliced cheese, like a colby jack or provolone or cheddar
  • 1 precooked rotisserie chicken, picked from the bones and lightly shredded
  • 1/2 lb bacon, cooked and roughly chopped
  • 1 small bunch scallions, chopped
  • 4 T butter
  • 2 t garlic powder
  • 1 t onion powder
  • 1/2 t pepper
  • 1/4 t paprika
  • 1/4 t salt

Then you will…

  1. In a small mixing bowl, combine the Greek yogurt with the Ranch seasoning powder and milk. Set aside.
  2. Preheat your oven to 350 degrees. Line a 9×13 baking dish with parchment paper.
  3. Place the bottom halves of the rolls in the baking dish.
  4. Spread half of the cheese on the rolls.
  5. Top with the chicken.
  6. Top with the bacon.
  7. Top with the scallions.
  8. Place dollops of the Greek yogurt on top.
  9. Cover with the remaining half of the cheese.
  10. In a small bowl, melt the butter.
  11. Mix the garlic powder, onion powder, pepper, paprika, and salt into the butter.
  12. Spread a little of the butter on top of the final layer of cheese.
  13. Cover the sandwiches with the top halves of the rolls.
  14. Brush more butter on top of the rolls.
  15. Cover the dish with aluminum foil.
  16. Bake 15-20 minutes or until warm and melty.

Strawberries n’ Yogurt Popsicles

Our teething toddler recently discovered popsicles and all their cool yumminess. We found a mini popsicle mold online that makes small popsicles that are just the right size for his cute little hands and mouth. He loves strawberries and yogurt, so we let that inspire these popsicles.

You will need:

  • 16 oz fresh strawberries, hulled
  • 1 c vanilla yogurt (I recommend a thicker yogurt like Greek or Icelandic skyr)
  • 4 T honey or maple syrup
  • 1/2 t lime juice
  • 1/2 t vanilla extract

Then you will…

  1. Puree all the ingredients in a blender until smooth.
  2. Pour into popsicle molds.
  3. Freeze overnight.
  4. Enjoy in the sunshine.

Greek Yogurt Ranch

Not everyone likes ranch, but if you do, try out this recipe. It can be used as a dip or a sauce, and it tastes even better if you let it sit overnight.

You will need:

  • 1 c plain Greek yogurt
  • 1 t dried parsley
  • 1/2 t dried dill
  • 1/2 t dried garlic powder
  • 3/4 t dried onion powder
  • 1/2 t dried chives
  • Salt and pepper, to taste

Then you will…

  1. Mix everything together in a small bowl, seasoning with salt and pepper to taste.
  2. Refrigerate overnight.

Note: if you want a thinner dip/sauce, slowly mix in milkĀ  until you reach the desired consistency.

Cinnamon Chocolate Bundt Cake

Sometimes I just want to bake a cake. Sometimes it is a layer cake. Sometimes it is a Bundt cake. The other night called for a fresh baked Bundt cake.

You will need:

  • 3 eggs
  • 2/3 c vegetable oil
  • 1/3 c unsalted butter, melted and cooled
  • 2 t vanilla extract
  • 6 oz plain Greek yogurt
  • 1 1/4 c brown sugar
  • 1 t baking soda
  • 1 T baking powder
  • 1/2 t salt
  • 1/2 t nutmeg
  • 3 c flour
  • 1 c semisweet chocolate chunks, roughly chopped
  • 1/2 c sugar
  • 1 T cinnamon

Then you will…

  1. Preheat your oven to 350 degrees. Grease and lightly flour a Bundt pan.
  2. In a large mixing bowl, whisk the eggs until light and fluffy.
  3. Whisk in the oil, butter, vanilla, and yogurt.
  4. Mix in the brown sugar, baking soda, baking powder, salt and nutmeg.
  5. Mix in the flour and chopped chocolate.
  6. In a small bowl, combine the sugar with the cinnamon.
  7. Spread half of the batter in the Bundt pan.
  8. Sprinkle with half of the cinnamon sugar.
  9. Spread the remaining batter in the pan and top with the remaining sugar.
  10. Bake 50-60 minutes or until golden and a tester inserted comes out clean.
  11. Allow to cool at least 10 minutes before inverting onto a serving plate.
  12. Optional: top with a little powdered sugar glaze.

Honey Poppy Banana Bread

This is a light banana bread with a hint of honey. It’s also full of poppyseeds, which is something I really like when I bake sweet breads. Your house will smell awesome when you make this! I challenge you to wait till it has cooled off before cutting a slice.

You will need:

  • 3-4 ripe bananas, lightly mashed
  • 1/4 c Greek yogurt (I had vanilla on hand, but plain would work too)
  • 2 large eggs, lightly beaten
  • 1/2 c vegetable oil or melted unsalted butter
  • 1/4 c honey
  • 1 t vanilla extract
  • 2 c flour
  • 3/4 c brown sugar
  • 1 t baking soda
  • 1 t baking powder
  • 1/2 t ground cinnamon
  • 1/4 t ground nutmeg
  • 1/4 t ground cloves
  • 1/8 t salt
  • 1.25 oz poppyseeds

Then you will…

  1. Preheat your oven to 350 degrees. Lightly grease a loaf pan with nonstick cooking spray.
  2. In a medium bowl, mix together the bananas, yogurt, eggs, butter, honey and vanilla.
  3. In a large bowl, combine the flour, brown sugar, baking soda, baking powder, cinnamon, nutmeg, cloves, salt and poppyseeds.
  4. Add the banana mixture to the dry mixture. Stir until just combined.
  5. Pour the batter into the loaf pan and bake for 45-55 minutes, or until golden and just set in the middle.
  6. Allow to cool 15 minutes before removing from the pan. Cool completely on a cooling rack.
