Peanut Butter Oatmeal Granola Bars

While home with our sweet newborn, I’ve learned having snacks I can eat one-handed nearby is a must. I love these bars chilled, so I recommend keeping them in the fridge and grabbing a slice when you need a delicious break from your day.

You will need:

  • 1 c creamy peanut butter
  • 1/4 c honey
  • 1/4 c maple syrup
  • 2 c old-fashioned oats
  • 1 c dried fruit, roughly chopped
  • 1/4 c dark chocolate chips, roughly chopped

Then you will…

  1. Line a 9×9 baking dish with foil and lightly spray with nonstick cooking spray.
  2. In a saucepan, heat the peanut butter together with the honey and maple syrup over medium-low heat until smooth and well combined. Remove from heat.
  3. In a large mixing bowl, mix together the oats and dried fruit.
  4. Stir the peanut butter sauce into the oat mixture.
  5. Stir in the chocolate.
  6. Press the mixture into the prepared dish and refrigerate at least 3 hours or until firm before slicing.

Fruitcake Inspired Shortbread Cookies

My mom enjoys fruitcake, although most of the family does not. I decided to try making a fruitcake inspired cookie in her honor for the winter holiday. This was the result. These would also be delicious with a little lemon glaze (powdered sugar + lemon juice + milk).

You will need:

  • 1 c dried fruits (such as cranberries, cherries, apricots etc.), roughly chopped
  • 1/2 c bourbon
  • 1 c unsalted butter, at room temperature
  • 3/4 c powdered sugar
  • Zest of one lemon
  • 1/2 t salt
  • 2 c flour

Then you will…

  1. In a small bowl, combine the dried fruits and bourbon. Allow to macerate for 3 hours, before draining.
  2. Preheat your oven to 300 degrees Fahrenheit. Line 2 baking sheets with parchment paper.
  3. In a large mixing bowl, cream together the butter, sugar, lemon zest and salt until light and fluffy.
  4. Gradually mix in the flour.
  5. Stir in the macerated dried fruits.
  6. Roll the dough out until it is 1/2-inch thick. Cut however you want!
  7. Place cookies on the prepared baking sheets.
  8. Bake for 25-30 minutes, or until starting to turn golden at the edges.
  9. Allow to cool for 5 minutes on the baking sheets before transferring to a wire rack to finish cooling.

Brown Butter Granola

D and I eat a fair amount of granola. I kept thinking, “why haven’t I tried to make my own?” Then I would forget about it until the next time I was picking up granola at the store. This is a basic recipe that can be tailored based on your tastes; use your favorite nuts and add in whatever dried fruits get you excited.

You will need:

  • 8 T (1 stick) unsalted butter
  • 1/4 c brown sugar
  • 1/4 c honey
  • 3 T pure maple syrup
  • 2 t vanilla
  • 1/2 t ground cinnamon
  • 1/4 t ground ginger
  • 1/4 t ground nutmeg
  • Pinch of sea salt
  • 1/2 c nuts (I recommend pecans or walnuts)
  • 2 c slow cooking old-fashioned oats
  • 1/2 c coconut flakes
  • 1/2 c unsweetened chocolate chips or chunks
  • 3/4 c dried fruit, chopped (I used a mix of apricots and cherries)

Then you will…

  1. Preheat your oven to 275 degrees. Line a baking sheet with parchment paper. I recommend one with sides.
  2. In a medium saucepan, melt the butter over medium heat. Allow the butter to foam and then brown, stirring regularly, about 5-7 minutes.
  3. Pour the browned butter into a small mixing bowl. Whisk in the brown sugar, honey, maple syrup, vanilla, cinnamon, ginger, nutmeg and pinch of salt.
  4. Pulse the nuts in a food processor until coarse ground.
  5. In a large mixing bowl, combine the nuts with the oats and coconut flakes.
  6. Stir in the browned butter mixture. Mix well.
  7. Spread the granola on the prepared baking sheet.
  8. Bake 45-60 minutes, stirring every 15 minutes. Remove from oven when golden brown.
  9. Allow to cool on the baking sheet.
  10. Break apart into a large mixing bowl.
  11. Mix in the chocolate and dried fruit.
  12. The granola will keep for about one week in an airtight container.
