S’mores Cookie Bars

What’s not to love about graham crackers, chocolate and gooey marshmallow? These are simply delicious cookie bars that come together quickly and disappear almost as fast.

You will need:

  • 1 c unsalted butter, room temperature
  • 3/4 c brown sugar
  • 3/4 c granulated sugar
  • 2 t vanilla extract
  • 2 eggs
  • 1/2 t ground cinnamon
  • 1 t baking powder
  • 1/4 t salt
  • 2 c graham cracker crumbs
  • 1 1/2 c flour
  • 7 oz container marshmallow fluff
  • 1 1/2 c semisweet chocolate chips

Then you will…

  1. Preheat your oven to 350 degrees. Line a 9×13 baking dish with foil and lightly grease with nonstick cooking spray or vegetable oil.
  2. In a large mixing bowl, cream together the butter and sugars until smooth and integrated.
  3. Mix in the vanilla and eggs.
  4. Mix in the cinnamon, baking powder and salt.
  5. Mix in the graham cracker crumbs and flour.
  6. Spread a touch more than half of the dough in the prepared pan.
  7. Spoon drops of fluff on top of the dough; try to spread as much as possible given the stickiness.
  8. Sprinkle the chocolate chips on top of the fluff.
  9. Spread the remaining dough on top.
  10. Bake 35-45 minutes or until the top is golden brown and the bars are set.
  11. Allow to cool in the pan.

Holiday 7 Layer Bars

I made these with my toddler, who loved sprinkling everything into the pan. It is a sweet combination of dried cranberries, white chocolate, a little dark chocolate and some coconut.

You will need:

  • 1 1/2 c graham cracker crumbs
  • 8 T unsalted butter, melted
  • 1 c white chocolate chips
  • 1/2 c semisweet or bittersweet chocolate chips
  • 1/4 c chopped walnuts
  • 1 c dried cranberries
  • 1 c sweetened coconut flakes
  • 14 oz (1 can) sweetened condensed milk

Then you will…

  1. Preheat your oven to 350 degrees. Line an 8×8 baking dish with parchment paper.
  2. Lightly grease the parchment with nonstick cooking spray.
  3. In a small bowl, mix together the graham cracker crumbs and melted butter.
  4. Spread into the prepared pan and light press together.
  5. Sprinkle on the white chocolate chips.
  6. Then sprinkle on the dark chocolate chips.
  7. Next sprinkle on the chopped walnuts.
  8. Then sprinkle on the dried cranberries.
  9. Then sprinkle on the coconut.
  10. Drizzle the condensed milk over the top.
  11. Bake 30-35 minutes, until lightly golden on top. Center should be set.
  12. Cool in the pan at least two hours before removing and slicing.

Salty Oat (Chip) Cookies

There is a tea house and cafe near my office that has “salty oat” cookies. I think they are the perfect treat: comforting and not too sweet. They are delicious with tea, coffee or cocoa. I set out recreate them, and this dough is awesome both with semisweet chocolate chip and without them. The last time I made them, I made half into cookie bars and used the other half of the dough to make frozen dough balls. Then I could pop a few cookies in the oven whenever we needed a quick treat!

You will need:

  • 2 sticks salted butter, room temperature
  • 2 c brown sugar
  • 2 eggs, room temperature
  • 1/2 t baking powder
  • 1/2 t baking soda
  • 1 T vanilla extract
  • 2 c flour
  • 2 c old-fashioned oats
  • Optional: 1/2 c bittersweet chocolate chips

Then you will…

  1. Preheat your oven to 350 degrees. Line a baking sheet with parchment paper if making cookies. Line a 9×9 baking pan with foil and lightly grease with nonstick spray if making cookie bars.
  2. In a large mixing bowl, cream together the butter and brown sugar until well mixed and smooth.
  3. Mix in the eggs until light and fluffy.
  4. Mix in the baking powder, baking soda, and vanilla extract.
  5. Mix in the flour.
  6. Mix in the oats (and chips if using) until just combined.
  7. Drop spoonfuls of the dough for cookies or spread half of the batter in the baking pan for bars.
  8. Bake for 10-14 minutes for cookies, until turning golden and set around the edges.
  9. Bake for 30-40 minutes for bars, until golden and set in the middle.

Cinnamon Brown Sugar Cookie Bars

These will not last long in your house. They have a gooey center and smell amazing while baking. Hope you enjoy them as much as we did! If you want extra cinnamon goodness, sprinkle some cinnamon sugar on top as well.

You will need:

  • 1/2 c unsalted butter, melted
  • 2 c brown sugar
  • 2 eggs, lightly beaten
  • 1 1/2 t vanilla extract
  • 1 T + 1 t ground cinnamon
  • 1 t baking powder
  • 1/4 t baking soda
  • Pinch of salt
  • 1 3/4 c all purpose flour

Then you will…

  1. Preheat your oven to 350 degrees. Line an 8×8 baking pan with foil and grease with nonstick cooking spray.
  2. In a medium mixing bowl, combine the melted butter with the brown sugar, eggs, and vanilla.
  3. Mix in the cinnamon, baking powder, baking soda and a pinch of salt.
  4. Mix in the flour until combined.
  5. Spread in the prepared baking pan.
  6. Bake for 30-35 minutes, or until the center is no longer jiggly.
  7. Allow to cool and set for at least 10 minutes before removing from the pan.
  8. Finish cooling on a wire rack.

Rum Cookie Bars

This is a simple recipe for blondie cookie bars. I added some spices and dark rum, which is particularly scrumptious with all of the caramel goodness from the brown sugar. The batter comes together quickly, and it’s based on ingredients you likely have in your pantry right now. What are you waiting for?

You will need:

  • 1 c packed brown sugar
  • 8 T unsalted butter, melted
  • 1 egg, lightly beaten
  • 1 t vanilla extract
  • 1/4 t salt, scant
  • 1/4 t ground nutmeg
  • 1/4 t ground cloves
  • 1/2 t ground cinnamon
  • 2 T dark rum
  • 1 c whole wheat flour

Then you will…

  1. Preheat your oven to 350 degrees. Line an 8×8 inch baking pan with parchment or tinfoil and lightly grease.
  2. In a medium mixing bowl, combine the brown sugar and melted butter until smooth.
  3. Mix in the egg, vanilla, salt, nutmeg, cloves, cinnamon and rum.
  4. Stir in the flour just until mixed together.
  5. Spread in the prepared pan.
  6. Bake 20-25 minutes or until golden and set in the middle.
  7. Allow to cool 15 minutes before removing from the pan.
  8. Continue cooling on a wire rack before enjoying with others!
