Sour Cream Blueberry Coffee Cake

I am a sucker for coffee cake, and summer is such a sweet time for blueberries. I love the crunchy exterior of this coffee cake and hope you do too!

You will need:

  • 1 c (2 sticks) unsalted butter, room temperature
  • 1 1/2 c sugar
  • 1 c brown sugar, divided
  • 2 eggs
  • 1 c sour cream
  • 1 1/2 t vanilla extract
  • 2 t ground cinnamon, divided
  • 1 t baking powder
  • 1/4 t salt
  • 1 3/4 c flour
  • 1 pint fresh blueberries (or 1 c frozen blueberries)
  • 1/2 c chopped pecans

Then you will…

  1. Preheat your oven to 350 degrees. Grease a nonstick Bundt pan with cooking spray.
  2. In a large mixing bowl, cream the butter together with the sugar and 1/2 cup of the brown sugar. 
  3. Beat in the eggs.
  4. Then beat in the sour cream, vanilla, 1 teaspoon of the ground cinnamon, baking powder and salt.
  5. Beat in the flour until just blended.
  6. Fold in the blueberries.
  7. Gently spread a third of the batter into the prepared Bundt pan.
  8. In a small mixing bowl, combine the remaining 1/2 cup of brown sugar with the remaining teaspoon of cinnamon and the pecans.
  9. Sprinkle brown sugar mixture over the batter. Using a knife, gently swirl the mixture into the batter.
  10. Gently spread the remaining batter in the pan.
  11. Bake for 60 to 75 minutes. Tester should come out clean.
  12. Allow to cool completely in the pan on a wire rack before inverting to remove from the pan.

Banana Bread Coffee Cake

This sweet treat brings together the best of banana bread with the best of coffee cake. Combining ripe bananas with warm cinnamon and brown sugar makes your kitchen smell amazing.

You will need:

  • 8 T unsalted butter, room temperature
  • 2/3 c light brown sugar
  • 2 eggs, lightly beaten
  • 4 ripe bananas, mashed
  • 2 t vanilla extract
  • 1 t baking soda
  • 1 t ground cinnamon
  • 1/4 t ground ginger
  • 1/4 t ground nutmeg
  • 1/4 t salt
  • 3/4 c flour
  • 1 3/4 c old-fashioned oats, divided
  • 2 T unsalted butter, cold
  • 1/2 c chopped pecans

Then you will…

  1. Preheat your oven to 350 degrees. Line a 9×9 baking dish with foil and grease with nonstick spray.
  2. In a large bowl, cream together 8 tablespoons of the butter with 2/3 cup of the brown sugar.
  3. Mix in the eggs, banana, and vanilla.
  4. Mix in the banking soda, cinnamon, ginger, nutmeg, and salt.
  5. Mix in the flour and 1 1/4 cup of the oats.
  6. Spread into the prepared pan.
  7. In a small bowl, mix together the remaining 1/2 cup of oats with the remaining 1/4 cup of brown sugar, 2 tablespoons of cold butter, and pecans until it forms a crumbly mixture.
  8. Spread the topping on the batter.
  9. Bake 35-45 minutes or until a toothpick in the middle comes out clean and the cake is golden.
  10. Allow to cool at least 10 minutes before serving.

Walnut Coffee Cake

20160122 Walnut Coffee Cake 03D and I enjoy coffee cake, especially when we are having a quiet weekend at home. This one has a lovely layer of cinnamon and walnuts in the middle that works well with the nutmeg-spiced cake batter.

You will need:

  • 1/4 c brown sugar
  • 1 3/4 c sugar, divided
  • 1 T + 1/2 t ground cinnamon, divided
  • 1 c walnuts, roughly chopped
  • 3/4 c butter, room temperature
  • 3 large eggs, lightly beaten
  • 1 1/2 t vanilla extract
  • 1/2 t ground nutmeg
  • 1 1/2 t baking soda
  • 1 1/2 t baking powder
  • 1/4 t salt
  • 3 c flour
  • 1 1/2 c yogurt (plain or vanilla)

 

 

Then you will…

  1. Preheat your oven to 350 degrees. Butter a bundt pan liberally.
  2. In a medium mixing bowl, combine the brown sugar with 1/2 cup of the sugar, the walnuts, and 1 tablespoon of the cinnamon. Set aside.
  3. In a large mixing bowl, cream together the butter with the remaining 1 1/4 cups of sugar until lightly and fluffy.
  4. Whisk in the eggs until light and creamy.
  5. Whisk in the vanilla, nutmeg, remaining cinnamon, baking powder, baking soda and salt.
  6. Mix in the flour and yogurt, alternating, until smooth.
  7. Spread 1/3 of the topping on the bottom of the bundt pan.
  8. Top with half of the batter
  9. Top with the remaining topping.
  10. Spread the remaining batter on top.
  11. Bake for 45-60 minutes, or until a toothpick in the middle comes out clean. It should be golden.
  12. Allow to cool in the pan for 10 minutes before turning out on a wire rack to continue cooling.

Cinnamon Chocolate Bundt Cake

Sometimes I just want to bake a cake. Sometimes it is a layer cake. Sometimes it is a Bundt cake. The other night called for a fresh baked Bundt cake.

You will need:

  • 3 eggs
  • 2/3 c vegetable oil
  • 1/3 c unsalted butter, melted and cooled
  • 2 t vanilla extract
  • 6 oz plain Greek yogurt
  • 1 1/4 c brown sugar
  • 1 t baking soda
  • 1 T baking powder
  • 1/2 t salt
  • 1/2 t nutmeg
  • 3 c flour
  • 1 c semisweet chocolate chunks, roughly chopped
  • 1/2 c sugar
  • 1 T cinnamon

Then you will…

  1. Preheat your oven to 350 degrees. Grease and lightly flour a Bundt pan.
  2. In a large mixing bowl, whisk the eggs until light and fluffy.
  3. Whisk in the oil, butter, vanilla, and yogurt.
  4. Mix in the brown sugar, baking soda, baking powder, salt and nutmeg.
  5. Mix in the flour and chopped chocolate.
  6. In a small bowl, combine the sugar with the cinnamon.
  7. Spread half of the batter in the Bundt pan.
  8. Sprinkle with half of the cinnamon sugar.
  9. Spread the remaining batter in the pan and top with the remaining sugar.
  10. Bake 50-60 minutes or until golden and a tester inserted comes out clean.
  11. Allow to cool at least 10 minutes before inverting onto a serving plate.
  12. Optional: top with a little powdered sugar glaze.

Apple Butter Cake

One of my good friends gifted me some apple butter made by his mom. It is scrumptious, and I wanted to try my hand at showcasing it in something equally enticing. This is a simple cake that you can bake in a 9×13 dish or a bundt pan.

You will need:

  • 1/2 c unsalted butter, room temperature
  • 1 c sugar
  • 2 eggs, room temperature and lightly beaten
  • 3/4 c apple butter
  • 1 c sour cream
  • 1 t vanilla extract
  • 1/2 c ground almond meal (optional)
  • 1 t baking soda
  • 1 t baking powder
  • 1/4 t salt
  • 2 c whole wheat flour
  • 1/2 c brown sugar
  • 1/2 t ground cinnamon
  • 1/4 t ground nutmeg

Then you will…

  1. Preheat your oven to 350 degrees. Lightly grease a 9×13 inch glass baking dish.
  2. In a large mixing bowl, cream together the butter and sugar until smooth and fluffy.
  3. Mix in the eggs until well combined and smooth.
  4. Mix in the apple butter, sour cream and vanilla.
  5. Stir in the almond meal (if using), baking soda, baking powder and salt.
  6. Stir in the flour until incorporated.
  7. Spread the batter in the prepared baking dish.
  8. In a small bowl, combine the brown sugar with the cinnamon and nutmeg.
  9. Sprinkle the spiced brown sugar mixture on top of the cake.
  10. Bake for 35-45 minutes, or until golden and a tester in the middle comes out clean.

Blueberry Coffee Cake

This recipe comes from my middle school cooking class.  I have made a few tweaks over the years to tone down the sweetness and let the blueberries shine through all the better. It makes a great addition to any weekend.

You will need:

  • 1/2 c (1 stick) unsalted butter, divided
  • 1/2 c brown sugar
  • 1/2 c old-fashioned oats
  • 1 1/2 t ground cinnamon, divided
  • 1/4 t ground nutmeg
  • 2 c all-purpose flour
  • 1/2 c sugar
  • 1/2 t salt
  • 2 1/2 t baking powder
  • 1/4 t ground ginger
  • 1/4 t ground cloves
  • 3/4 c milk
  • 1 t vanilla extract
  • 1 pint fresh blueberries or 2 c frozen (thawed and drained)

Then you will…

  1. Preheat your oven to 350 degrees. Lightly grease an 8×8 baking dish.
  2. In a small bowl, combine 1/4 of cold butter (cut into small pieces) with the brown sugar, oats, 1/2 teaspoon of the cinnamon and nutmeg. I recommend using your fingers to mix the ingredients together into a crumbly meal. Set aside.
  3. In a large bowl, combine the flour with the sugar, salt, baking powder, the remaining teaspoon, ginger and cloves.
  4. Melt the remaining butter and mix it into the flour mixture.
  5. Mix in the milk and vanilla extract until just combined.
  6. Fold in the blueberries.
  7. Spread the batter into the prepared pan.
  8. Sprinkle with the crumb topping.
  9. Bake for 45 minutes or until a toothpick entered in the center comes out clean.
  10. Allow to cool for at least 15 minutes before serving.

Cinnamon Coffee Bundt Cake

I made this one morning while D was sleeping in late. It’s easy to pull together, and a slice is the perfect complement to a morning cup of coffee. I baked it in a Bundt pan, but this would be great in a 9×9 baking dish as well. Just use what you have on hand!

You will need:

  • 1/4 c + 1/3 c brown sugar, divided
  • Pinch of salt
  • 2 c + 2 T whole wheat flour, divided
  • 3 T old-fashioned oats
  • 1 1/2 t cinnamon, divided
  • 1/4 t nutmeg, scant
  • 3 T unsalted butter, melted
  • 10 T unsalted butter, softened
  • 1 t instant coffee powder
  • 1/2 c mini chocolate chips
  • 1 1/2 c sugar
  • 2 eggs, lightly beaten
  • 2 t vanilla extract
  • 1 t baking powder
  • 1/2 t baking soda
  • 8 oz light sour cream (or plain Greek yogurt)

Then you will…

  1. Preheat your oven to 350 degrees. Lightly grease a Bundt pan with non-stick cooking spray.
  2. In a small mixing bowl, combine together 1/4 cup of the brown sugar with a pinch of salt, 5 tablespoons of flour, the oats, 1/2 t cinnamon, nutmeg and the melted butter.
  3. Sprinkle the mixture evenly along the bottom of the Bundt pan.
  4. In another small mixing bowl, mix together 1/3 cup of the brown sugar with 1 teaspoon of the cinnamon, the instant coffee and the chocolate chips. Set aside.
  5. In a medium mixing bowl, cream together 5 tablespoons of softened butter with the sugar.
  6. Mix in the egg and vanilla.
  7. Stir in the baking powder, baking soda and remaining 2 cups of flour.
  8. Mix in the yogurt or sour cream, whichever you decide to use.
  9. Spread half of the batter on top of the cinnamon-sugar mixture already in the pan.
  10. Sprinkle the cinnamon-chocolate chip mixture of the the batter.
  11. Top with the remaining batter.
  12. Bake for 45 to 50 minutes, or until a tester comes out clean.
  13. Allow to cool for 10 minutes before removing from pan. Allow to cool the rest of the way on a wire rack.
