Cranberry Nut Cake

This buttermilk cake studded with fresh cranberries and white chocolate and full of ground walnuts. I loved the combination of sharp tartness, creamy sweetness, and nuttiness.

You will need:

  • 3/4 c brown sugar
  • 1/4 c sugar
  • 1 orange, zested
  • 8 T unsalted butter, room temperature
  • 1 egg, lightly beaten
  • 2 t vanilla extract
  • 2 t baking powder
  • 1 t ground cardamom
  • 1/2 t ground cinnamon
  • 1/4 t salt
  • 1/2 c buttermilk (substitute: combine 1 T lemon juice with cup of milk and let sit for 5 minutes; stir and use)
  • 1/2 c walnuts, finely ground
  • 1 1/2 c flour
  • 12 oz fresh cranberries
  • 1/2 c white chocolate chips
  • 3 T cinnamon sugar

Then you will…

  1. Preheat your oven to 350 degrees. Grease and 8 or 9-inch springform and line the bottom with parchment paper.
  2. In a large mixing bowl, combine the sugars with the orange zest to release the orange oils.
  3. Cream the butter into the sugar mixture.
  4. Mix in the egg, vanilla, baking powder, cardamom, cinnamon and salt.
  5. Mix in the buttermilk, ground walnuts, and flour.
  6. Fold in the cranberries and white chocolate
  7. Spread in the pan and sprinkle with cinnamon sugar.
  8. Bake 45-60 minutes, until golden and set in the middle.
  9. Allow to cool for 10 minutes before removing from the pan.

Irish Soda Bread

This bread is extra tasty due to the addition of currants and a little bit of caraway seed. Serve it savory with sharp Irish cheddar and some sour cornichons. Serve it sweet with a bit of butter and jam.

You will need:

  • 4 c flour plus 1 T extra
  • 4 T sugar
  • 1 t baking soda
  • 1 1/2 t salt
  • 4 T (1/2 stick) cold butter, cut into pieces
  • 1 3/4 c cold buttermilk, shaken
  • 1 egg, lightly beaten
  • 1 orange, zested
  • 1 c currants
  • 1/2 t caraway seeds

Then you will…

  1. Preheat your oven to 375 degrees. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour with the sugar, baking soda and salt.
  3. Add the butter and mix until well combined (you may want to use your fingers for this step).
  4. In a measuring cup, lightly beat together the buttermilk, egg and orange zest.
  5. Slowly add the buttermilk mixture to the flour.
  6. Toss the raisins with a tablespoon of flour and the caraway seeds. Mix them into the wet dough.
  7. Flour your counter well. Dump the dough onto the floured counter and knead it a few times until you can shape it into a round loaf.
  8. Set the loaf on the prepped baking sheet and lightly cut a cross into the top with a serrated knife.
  9. Bake for 45-55 minutes, or until the bread sounds hollow.
  10. Cool on a baking rack.

Parmesan Chicken Tenders

I LOVE CHICKEN TENDERS. I admit it. They are one of my favorite meals and can always turn my day around for the better. These are quick to put together and then are baked. The end result is a crispy meal that will make you smile.

You will need:

  • 2 c buttermilk
  • 1/4 c hot sauce
  • 1 lb chicken tenders
  • 1 c flour
  • 1/2 t paprika
  • 1/2 t garlic powder
  • 3/4 t pepper, divided
  • 3 eggs
  • 1 1/2 c Panko bread crumbs
  • 1/4 t salt
  • 3/4 c shredded Parmesan

Then you will…

  1. In a large ziplock bag, combine the buttermilk with the hot sauce.
  2. Add the chicken into the marinade.
  3. Allow to marinate for at least an hour.
  4. On a large plate, combine the flour with the paprika, garlic powder, and 1/4 teaspoon of the pepper.
  5. On a large plate, beat the eggs until the whites and yolks are combined.
  6. On a third plate, combine the bread crumbs with the remaining 1/2 teaspoon of pepper, the salt and the Parmesan.
  7. Preheat your oven to 400 degrees. Line a baking sheet with parchment paper.
  8. For each piece of chicken, allow the excess buttermilk to shake off. Then dredge in the flour mixture. Coat with egg and then dredge in the Parmesan mixture.
  9. Place the chicken on the prepared baking sheet.
  10. Bake for 10 minutes.
  11. Flip the chicken over and bake for another 10 minutes, or until cooked through and golden.
