Oven Fries

While tater tots are quite possibly one of my favorite things, I also have a soft spot for fries.  These ones are easy to prep, although they bake for awhile.  You can substitute sweet potato or even parsnips for the potato and, of course, you can play with the spices.  It all ends up crispy and delicious!  The recipe below makes enough for two people.  Just add more potatoes to feed more!

You will want:

  • 2 red bliss potatoes
  • 3-5 T olive oil (enough to just coat the fries)
  • 3 t garlic powder
  • 2 or 3 shakes of red pepper flakes
  • Salt and pepper to taste

Then you:

  1. Slice the potatoes into 1/4 inch slices and then slice the slices into a fry shape.  Put cubes in a bowl of water while you work to remove some of the starch.
  2. Preheat oven to 400 and line a baking tray with parchment paper.  (It’s much easier to clean after!).
  3. Drain the uncooked fries and put in a big ziplock bag.  Add the oil and spices and shake until well coated and mixed.
  4. Dump the fries out on the lined baking sheet and spread into a single layer.
  5. Allow to bake about an hour, tossing every 20 minutes or so.
