Lemon Garlic Green Beans

From green bean casserole to roasted green beans, they seem to be a staple at Thanksgiving.  Since the oven in my new apartment was big enough to hold only the turkey on Thanksgiving day, I wanted to limit the things that needed to be baked the day before.  These green beans were light and delicious, with lots of snap!

You will want:

  • 1 lb fresh green beans, trimmed
  • 2-3 cloves garlic, minced
  • 2 T olive oil
  • 1 T butter
  • 1 lemon, zested
  • Salt and pepper, to taste


  1. Heat a skillet over medium heat, with the olive oil and butter until hot.
  2. Add the garlic and stir gently until you can start to smell it in the air.
  3. Add the green beans and toss.  Cook until just starting to become tender.
  4. Add the lemon zest, salt and pepper.  Serve hot!
